Cream Filling
  1. Make sure to bring cream cheese up to room temperature.
  2. While you are waiting on the cream cheese: throw the bowl and beaters you are planning on using to whip the heavy cream with into the freezer for 10-15 minutes.
  3. Remove and whip the cream until soft peaks form. Place bowl in the fridge while doing the next step.
  4. Beat cream cheese, powdered sugar, and vanilla together until smooth.
  5. With a spoon fold the whipped cream into the cream cheese mixture.
  6. Spread into the bottom of the pre-baked pie crust. Chill in fridge while making Blueberry topping.
Blueberry Topping
  1. In a medium saucepan on the stove combine: water, salt, cornstarch lemon juice, sugar and 1 cup of blueberries (this is where I use the frozen stuff.
  2. Bring to a boil. Smashing the blueberries on the side of the pan as you go. Wait until it boils long enough to thicken and turn a glossy color.
  3. Remove from heat and add 1 Tablespoon of Butter, stir until melted. Let sit for 15 minutes.
  4. Stir the remaining 4 cups of fresh blueberries into the glaze. Pour on top of the cream filling.
  5. Refrigerate for at least 4 hours. Preferably overnight.
  6. Slice and enjoy!!!
