BEST MINT CHOCOLATE BROWNIES

Brownie Layer
Mint Buttercream Frosting Layer
Chocolate Ganache
Instructions
  1. Brownie: Mix Brownies according to box instructions. Grease 9×13 pan and pour in batter. Bake 325 degrees for 30-32 minutes. Cool to room temperature then place in the fridge to chill while making mint buttercream.
  2. Frosting: ***I DOUBLE THIS PORTION OF THE RECIPE BECAUSE I LIKE A THICKER LAYER OF FROSTING*** Add all ingredients and mix until light and fluffy, but not too runny. Add milk if needed. Spread on chilled brownies. Place back into the fridge to chill while prepare the ganache.
  3. Ganache: Place all chocolate chips in a microwave safe bowl with chunks of butter. Melt for 1 minute and stir. Place back in microwave for 15 second intervals until smooth and creamy… adding the oil until smooth and creamy texture similar to yogurt. Pour on the top of the buttercream and spread quickly so the buttercream does not have time to melt and put back into the fridge until firm. Cut and serve.
  4. I store these in the fridge and serve them chilled, because I like a firmer ganache layer.
