We made this for my dad’s birthday last week and well… 5 lbs later… Just kidding.

Having given this such a glowing review, I am trying to embrace a low sugar, gluten free, low dairy (pretty much just greek yogurt and a small amount of cheese) diet. But I think a treat every once in a while is okay… It’s just hard once you eat sugar to stop. It’s so addictive!

Cake
  1. Cake: Pre-heat oven to 350ΒΊ F. Grease three 8-inch or two 9-inch round cake pans with cooking spray and lightly dust with flour. I like to do 3 8x8 pans. In mixing bowl (Stand Mixer), add flour, sugar, cocoa, baking powder, baking soda, and salt. Stir until well combined. Add milk, oil, eggs, and vanilla to flour mixture and mix together on medium speed until well mixed. Reduce the speed to low and add boiling water to the cake batter a little bit at a time. Once the water is all mixed in, beat on high for about 1 minute. Evenly distribute cake batter between the three 8x8 pans (or two 9x9) prepared cake pans. Bake for 30-35 minutes, or until a toothpick or cake tester inserted in the center comes out clean. Remove from the oven and allow to cool for about 10 minutes. Remove from the pan and cool completely. Chocolate Buttercream Frosting:

  1. German Topping: In a saucepan, combine egg yolks, evaporated milk, brown sugar and butter. Cook over medium heat until all the ingredients are fully mixed. Keep on medium heat for 10 more minutes or until the mixture thickens. Allow to cool and spread generously on the tops of all three layers, stacking as you go.
Chocolate Buttercream Frosting
  1. Whip all ingredients until light and fluffy spread smoothly on the sides of the cake.
